Ingredients

8Spatchcock quartered and boned

150mlVerjuice

1Bunch of tarragon roughly chopped

a good grind of black pepper

½ Savoy cabbage, finely sliced

100 gSpec or bacon finely diced

200 gButter

1 tspCaraway seeds

DRESSING

100 mlVerjuice

100mlOlive Oil

1Bunch of tarragon roughly chopped

½Telegraph cucumber cut into a fine dice

½Bunch of chives cut into 90mm batons

Method

Remover the legs and breasts from the spatchcock and marinade in the verjuice, tarragon and black pepper overnight in the fridge.

Melt the butter in a heavy-bottomed pot large enough to fit the cabbage. Sweat the onion, bacon and caraway for five minutes on medium heat. Add the cabbage and continue cooking until the cabbage drops and add the verjuice and continue to cook for a further 15 minutes. Set to the side and allow to settle.

Season with salt and pepper and pan-fry the spatchcock in a little butter and oil until golden. Place onto an oven tray and cook in a pre-heated oven at 200 deg C for 15 minutes or until cooked through. Remove from the oven and allow to rest for 15 minutes

Make the dressing by incorporating the verjuice, olive oil, tarragon and cucumber, season with salt and pepper.

To serve place the spatchcock back into the oven for a few minutes to reheat. Using a 90cm x 40cm ring on each plate place a spoonful of the cabbage into each ring, press down lightly to make flat.
Remove the ring and place 4 pieces of the spatchcock (2 legs and 2 breasts)
on top of each of the cabbage mounds. Finish with a good spoonful of the
dressing on top of the spatchcock and garnish with the chive batons
