2 kgTomatoes, chopped

2Green apples, peeled, chopped

2Large onions, chopped

4Garlic clove, sliced

1Red chilli, chopped (optional)

4 cmGinger

150 gSultanas

500 gBrown sugar

2Garlic cloves, finely chopped

2 tsp Whole black peppercorns

150 mlRed wine vinegar

5Cardamom seeds

½ tsp Paprika


Place tomatoes, apples, onions, sultanas, vinegar, sugar, garlic, mustard and curry powders and peppercorns in a large saucepan with 2 tablespoons salt.

Stir over low heat until sugar dissolves, then increase to medium-high and bring to the boil. Reduce heat to medium-low and cook, stirring occasionally, for 45-50 minutes until the ingredients have broken down and the mixture is thick. (To test, press the back of a metal spoon into the mixture. If a pool of liquid forms in the spoon, cook for a little longer.)
