This is one of my go-to salads for a light fresh entrée or delicious salad as a side for social meals, add some smoked salmon or even poach chicken if you wish.

This is one of my go-to salads for a light fresh entrée or delicious salad as a side for social meals, add some smoked salmon or even poach chicken if you wish.

Ingredients

DRESSING

50gFinely chopped eschalotes

50gFinely chopped cornichons

50gFinely chopped capers

1 bunchFinely chopped chives

2 tbsp Finely chopped parsley

2 tbsp Finely chopped tarragon

2 tbsp Finely chopped chervil

1 tbspLemon Juice

200g Mayonnaise

Salt and Pepper

SALAD

4Cooked and pealed kipfler potatoes

4Hard boiled eggs

12Pitted and roasted black olives

12Cornichons

12Breakfast radishes

2Butter lettuce

1 bunchPicked Chervil

¼ punnetEdible Flowers

Method

Combine all of the ingredients to make the sauce and leave to stand in the fridge for 1 hour

Arrange the salad on a flat plate starting with the Butter lettuce adding the other ingredients in an artistic fashion.

Dollop the sauce across and the salad and garnish with picked Chervil
and edible flowers
