This is easy to make highly flavoured Kimchi, mess around with the quantity of ingredients like garlic, daikon and Kochukara for the flavour combination you like the best

Ingredients

180gKochukara (Korean red pepper powder)

2 tspSauejoet (salted shrimp)

1Chinese Cabbage

230gDaikon Radish

150gSalt

4Spring Onions

60mlFish Sauce

¼ tsp Minced Ginger

1 tbsp. Minced Garlic

1 ½ tsp.Sugar

Method

Cut the Cabbage into 50mm slices and place in a large bowl

Sprinkle in the salt and toss to cover evenly

Add enough water to submerge the cabbage

Cover and leave to stand at room temperature

Drain the cabbage and rinse with cold water

Combine with the remaining ingredients and combine

Pack the mixture tightly in a jar and seal, Leave to sit in dark place for 24 hours

Release the gas and leave for 48 hours in the fridge before serving.
