Duck Fat Chips with Garlic and Speck

Ingredients

200gDuck Fat

5 largeDesiree Potatoes

15Peeled Garlic Cloves

150 gramsFinely Diced Speck

Sea Salt

Method

Steam or simmer the potatoes for around 30 minutes, or until they are just cooked

Cool, peel and cut each potato into 4 chips

Place the duck fat into a roasting pan, I use baking paper underneath to help with the cleaning up and place in the oven set to 200oC. keep the chips separated slightly so they crispen on all corners as they cook. Depending on the oven the cook time will be about 40 minutes and you will need to turn them 4 times to colour and crispen each side.

15 minutes before they are ready throw in the garlic and turn occasionally to get an even cook and colour.

5 minutes before they are ready add the diced speck.

When they are golden and crisp, remove them from the oven and allow them to stand in a warm place. This will allow the chips to relax and soak up the duck fat to make them extra yummy.

Serve and sprinkle with seas salt
