The simple things in life are the best and this is just that, caramel vanilla custard yumminess.

Ingredients

600mlMilk

3Whole eggs

2Egg yolks

1Vanilla Pod

100gSugar

Method

Place the sugar in a small pot with just enough water to dissolve it and bring to the boil. Cook until a med to dark caramel do not let it burn. Tip this evenly in your ramekin moulds and leave to set

Split and scrape the vanilla pod into the milk and bring to the boil, allow to stand for a few minutes before removing the pod.

Whisk the eggs and gradually add the milk until combined and divide evenly amongst the ramekins.

Place in a warm water bath with a paper napkin underneath the ramekins, cover and cook in a preheated oven at 130oC until set

Tip: if they rise in the middle they is definitely cooked and if the mixture is warm it will cook more quickly
