Working with the NSW Government, Tom Rutherford was engaged to deliver world-class food and beverage at the BOAO Forum for Asia (BFA). The aim of this high-level political and corporate event was to improve economic cooperation within Asia. BFA is attended by senior politicians and corporate representatives from across the Asia region.

The two day conference, held across the exclusive venues Overseas Passenger Terminal and Government House required catering for their welcome reception and gala dinner.

To showcase the world-class quality of the local agricultural industry, all produce was sourced locally within NSW including meats, premium wines, vegetables and water.

The Welcome Reception treated guests with delicious canapes including Tuna tartare in a crisp cone with ponzu and Honey quail breast on a lotus root amongst others, accompanied with 2013 Ross Hill Pinnacle Chardonnay (Orange) and 2015 Andrew Thomas ‘Braemor’ Semillon’ (Hunter Valley).

To create food and beverage experience for the high-calibre of guests, Gala Dinner attendees enjoyed main meals from braised ox-cheek in Pedro Jimenez, Pan seared Tasmanian ocean trout or a baked egg
plan melanza. The A Le Carte style menu meant food allowance had to be made to ensure all guests enjoyed their preferred meal.
