Weeks in the planning, preparation for such an event starts the day before, where bottles of 2009 Grange Hermitage, are tilted at the necessary angle of 30°, to ensure they are ready for decanting two hours before guests arrive.

Encasa Restaurant

Encasa had two distinct and very popular food businesses: the Encasa Restaurant, which served three sittings each service of authentic Spanish food daily, and their successful Deli.

Though the Restaurant was popular and supported the Encasa brand, its profitably was marginal. The Deli was seen as the most successful component - the core business – which could be expanded by opening more outlets.

When Penrith Panthers first approached Tom, they were facing some challenges around profitability and patronage, with a suspicion that the back of house systems, processes and staff were not operating with optimal efficiency or effectiveness.

Tom’s approach was to bring a holistic vision for the F&B Business but also focus on some low hanging fruit to bring quick financial wins. He developed a Business Plan which set out what the F&B Business should look like and importantly, how it should be sourced.

In the life of any food and beverage establishment, there comes a time to review and refresh the brand. The Langham Sydney engaged Tom, almost to re-invent themselves as a dining location.

They took the opportunity not just top refresh the menus, but their whole business model: they wanted a meaningful Business Plan for the next 1-3 years, based on solid Market Research of similar and desirable competitors. Each department needed a financial model with profitability and budget forecasts, and an HR solution.
